A New Dish

Supper in a hurry:)

I'm trying to use up my current supplies before grocery shopping, so dishes are created around what I have on hand, not the other way around.

Tonight's Chickpea dish :

2 TBS Sunflower oil
2 small onions, halved and sliced thin
2 cloves garlic, minced
small amount of veg. broth (or water)
1 heaped tsp paprika
1 hot pepper chopped
1 can chickpeas, rinsed
1 large sweet potato, peeled, diced
1 potato, peeled, diced
Salt and Pepper

Heat oil, add onions, add a little salt, cook until  they soften.
Add garlic, stir.
When onions are golden, add a little broth as needed. Add sweet potato, potato, paprika, stir well, lower heat and cover dish. Cook until nearly done, then add chickpeas. Stir - heat until chickpeas are hot.
Season w. Salt and Pepper and enjoy.

  1. This looks good! I even have all those ingredients, so I should try it! I think I will try it on Mon.... my DS is home for the weekend, with a friend, and I doubt he would appreciate my experimenting on him.

    I did my own throw-together supper last week, and it was so good I did it again the next night. First I cooked some salmon; then in the same pan, I sauteed what veggies I had (celery, garlic, sweet peppers, broccoli). Then I scrambled an egg and threw that in, along with the salmon, broken up, and a bit of cheese. It was majorly good! :)

    Glad you like the idea.
    Usually, those things from the veggie drawer and the pantry make the most enjoyable dishes. No big planning, shopping required:) -
    Added benefit: you use up the leftovers:)

  3. Hey again-- Sorry for talking about fish and eggs on here. I wasn't thinking about your being a vegan. So I came back to apologize... and I get the benefit of it, because I'm reminded of your great recipe! That looks so good, I may try it tonight!

  4. No apology needed:)
    I'm not even a vegan... Normally, I am a lacto-ovo vegetarian. For the duration of the Detox I'm excluding all dairy, eggs - and a few other items, only to re-introduce them gradually, which will (hopefully) help me figure out what works for me and what I need to use more sparingly.
