My First Tomato Soup

... I think...


a little olive oil
1 large sweet onion, diced
2 garlic cloves minced
1 Hot red pepper, stem cut off, chopped, seeds and all (or a sweet pepper if you prefer)
1 carrot, grated (to counteract the acidity of the tomatoes)
1 can Eden Crushed Tomatoes
1 Imagine Vegetable broth


Heat olive oil,  add onion, stir, and cook until it softens. Add garlic, cook for a couple of minutes, then add hot pepper and grated carrot. Stir frequently. Let them soften.
Add the tomatoes, stir, then add the Broth and heat to boiling. Reduce heat to LOW, cover and cook for about 25-30 minutes. I use my immersion blender to blend it.
Fresh Basil would be a nice addition.

  1. Your soup sounds good. I love tomato soup of all kinds. I made a tomato soup of stuff from the garden this year. Just cooked a lot of tomatoes, and threw in whatever came in from the garden that day: peppers, onions, kale, okra, green beans, etc. I also added a little garlic and salt. (Might have added basil and cilantro, if they were still going-- don't remember.) I froze it and now I get to enjoy garden freshness during these cooler days. It tastes SO good! :)
